A unique imprint of terroir in the glass. 100% Assyrtiko. The Santorini PDO from Akra Chryssos reflects the deep-rooted connection of the Chryssos family with wine. Family-owned Assyrtiko vines, over 50 years old, located in the renowned winegrowing villages of Pyrgos, Megalochori, and Akrotiri, provide the exceptional raw material.
Embracing organic practices, including manual harvesting, the wine is produced through gentle, natural winemaking processes, using native yeasts and minimal sulfites. The wine undergoes spontaneous fermentation in stainless steel tanks and remains on the lees for 7 months.

PRODUCTION & VINIFICATION
Production
The approach of viticulturist Spyros Chrysos in Santorini enhances the complexity of the island’s wines, highlighting the subtle nuances of Greece’s finest terroir. The wine is produced from organically cultivated vineyards located in three different villages of Santorini – Pyrgos, Megalochori, and Akrotiri. The unique conditions of the volcanic soil and the island’s distinctive microclimate impart exceptional quality, intensity, and complexity to the grapes, forming the foundation for a wine with a truly unique character.
vinification
Vinification is carried out with absolute respect for the raw material, following a “gentle” approach. Fermentation takes place in stainless steel tanks with indigenous yeasts, allowing the wine to authentically express the characteristics of its terroir. The wine then patiently matures on its fine lees for seven months, developing an intense spicy and mineral character with depth and concentration. Its high acidity gives the wine vibrancy and structure, while its great aging potential ensures its evolution over time.
