A unique expression of the terroir in the glass. 100% Assyrtiko. The Santorini PDO by Akra Chryssos reflects the Chryssos family’s long-standing connection to wine, as it is produced from three privately owned vineyard plots located in some of the island’s most renowned winegrowing villages: Pyrgos, Megalochori, and Akrotiri. Ungrafted Assyrtiko vines, over 50 years old, are rooted in nutrient-poor volcanic soils, naturally low in organic content.

VITICULTURE & WINEMAKING
Viticulture
Vasagia, Koukounaria, and Posta: three vineyard plots located in Santorini’s most important winegrowing villages. Organic cultivation is based on preserving the vineyard’s natural balance, with all vineyard work carried out exclusively by hand. The over-50-year-old vines are trained in the traditional “kouloura” or “kladeftiko” method, protecting the grapes from strong winds and intense sunlight. Yields remain exceptionally low, resulting in highly concentrated grapes of outstanding quality.
Winemaking
In the winery, grape handling follows a delicate, minimal-intervention approach. Only free-run juice is used for fermentation, which takes place spontaneously with indigenous yeasts in stainless steel tanks, followed by 7 months of maturation on fine lees before bottling. Each vineyard is vinified separately, with the final blend selected after numerous trials—ultimately capturing a Santorini of tension, complexity, concentrated fruit, piercing minerality, and sharp acidity.
